Recipe: Vegan White Wine Risotto

This Vegan White Wine Risotto is a creamy and indulgent dish that's perfect for a special occasion or a cozy night in. Made with arborio rice, sautéed onions, garlic, and white wine, this risotto is creamy, flavourful, and perfect as a main or a side dish.   • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups arborio rice
  • 1/2 cup vegan white wine
  • 4 cups vegetable stock
  • 1/2 cup nutritional yeast
  • 1/4 cup vegan butter
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)


  1. In a large saucepan, heat the olive oil over medium heat. Add the onion and garlic and sauté for 5 minutes, until they start to soften.
  2. Add the arborio rice to the pan and stir to coat in the oil. Cook for 1-2 minutes, stirring frequently.
  3. Add the white wine to the pan and stir well. Cook for 2-3 minutes, until the wine is absorbed.
  4. Add the vegetable stock, one cup at a time, stirring frequently and waiting for the liquid to be absorbed before adding the next cup.
  5. Once the risotto is cooked (after about 20-25 minutes), stir in the nutritional yeast and vegan butter. Season with salt and black pepper to taste.
  6. Serve hot with chopped parsley as a garnish.
