Recipe: Vegan Red Wine Risotto

Ingredients:
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 1/2 cups Arborio rice
- 1 1/2 cups vegan organic red wine
- 1 1/2 cups vegetable stock
- 2 tbsp olive oil
- Vegan Parmesan cheese, for serving (optional)
Instructions:
- In a large pot, heat olive oil over medium heat. Add onion and garlic and sauté for 5 minutes, until they start to soften.
- Add Arborio rice and stir to coat in the oil, onion, and garlic mixture. Cook for 2-3 minutes, until the rice is slightly translucent.
- Begin adding the organic red wine and vegetable stock, about 1/2 cup at a time, stirring constantly and allowing each addition to be absorbed before adding the next. This process should take about 25-30 minutes, until the rice is tender and the mixture is creamy.
- Remove from heat and let the risotto rest for 2-3 minutes.
- Serve hot. You may sprinkle with vegan Parmesan cheese, if desired.
